Small enough for precise, close-up work and sharp enough to make it effortless — this 5.6-inch Kiri Petty is the detail specialist every kitchen needs.
Built from the same AUS10 high-carbon, multi-layer steel as the rest of the Kiri range, this Petty knife is hardened to 60±2 HRC and hand-finished to a mirror-polished 15° edge per side — sharp enough for trimming, peeling and intricate cuts that a larger blade cannot manage comfortably.
Its compact size does not come at the cost of character: the blade carries the same hammered kurouchi finish as its larger siblings, and it is fitted with a rosewood handle sealed in high-temperature wax for a warm, secure grip that suits close-control work.
Kurocho makes the Petty to the same standard as the gyuto, because the small blade is the one most cooks end up using several times a day.

Questions

It is a small utility blade, ideal for peeling, trimming and precise cuts on smaller fruits, vegetables and herbs where a full-size chef's knife is too large to control comfortably.
Hand wash and dry immediately — this knife is not dishwasher safe.
Regular honing keeps the 15° edge aligned, and an occasional whetstone sharpening will restore it fully. A leather strop helps maintain the mirror finish between sharpenings.
It is best kept to fine, precise work — avoid bone and frozen food, which can chip the thin edge.
