The versatile in-between blade every kitchen needs — this Japanese-Style Knife bridges the gap between a full-size chef's knife and a small paring knife.
This 5 inch utility-style Japanese-Style Knife is forged around a VG10 steel core and clad in 67 layers of high-carbon Damascus steel, giving it a keen, durable edge that holds up to everyday precision tasks without the bulk of a larger blade.
Each blade is precision-forged and hand-finished with an 8–12° edge angle per side, making light work of small fruits, vegetables and finer cuts that a chef's knife handles clumsily. The handle is shaped for balance and comfort, so it quickly becomes the knife you reach for without thinking.
Built on Japanese blade-making principles — a hard, fine edge and a shape that rewards control — it's designed to be the reliable, everyday companion in your knife roll.
