A small blade with big presence — this compact Japanese-Style Knife is built for the delicate, detailed work that larger knives can't do gracefully.
This 3.5 inch fruit-style Japanese-Style Knife is forged around a VG10 steel core and clad in 67 layers of high-carbon Damascus steel, giving it a razor-sharp, agile edge suited to fine slicing and intricate cuts.
Each blade is precision-forged and hand-finished with an 8–12° edge angle per side, so it peels, trims and shapes fruit and small vegetables with minimal pressure and clean results. The handle is shaped for a secure, balanced grip, keeping detailed work effortless and controlled.
It's a knife made for finishing touches — the kind of precise, graceful control that shows in the presentation of a dish, built on the same principles that guide our larger blades.

No. This is a fine, precision blade for fruit and small vegetables — avoid bones and frozen food, which can chip the edge.
